Chai Tea Icing (enough for a 10" tube cake)
This powdered sugar icing is giving a little kick with the addition of your favorite Chai Tea. You will notice we ask you to brew an entire cup of tea and only use a tablespoon of it. This is due to the fact that it is too difficult to brew a tablespoon of that tea. So enjoy your cup of tea while you bake.
- 4 oz of water
- 1 tsp Chocolate Chai, Pumpkin Spiced Chai, Masala Chai, or South African Chai
- 8 oz of milk
- 1 cup of sifted powdered sugar
- 1/4 tsp of vanilla extract
Heat up the 4 ounces of water to a boil and steep your tea for 5 minutes. Then mix the milk with the tea. It will remain warmer if you put the milk out on the counter while your water is boiling. Reserve 1-2 tablespoon of your chai tea blend for the icing and sip on the rest while it blends in the mixer.
In an electric stand mixer, sift in the 1 cup of powdered sugar. Put the blender on low and slowly pour in the vanilla extract and the first tablespoon of Masala Chai tea. If necessary, pour in 1 tsp at a time additional Chai Tea until the icing reaches a drizzling consistency.
